Vera Fit Tip: One Minute Spinach - 3/1/2010

We all know how healthy spinach is but lots of us don’t like to eat it. This recipe is sure to make a spinach lover out of you! 

  • 1 pound fresh spinach
  • 1 tsp lemon juice
  • 1 medium fresh garlic, pressed or chopped
  • 1 Tbsp extra virgin olive oil
  • salt and cracked black pepper to taste
  • Optional:
  • chopped tomato
  • kalamata olives
  • cashews
  • goat cheese
  • few drops tamari soy sauce
  1. Chop or press garlic, or buy ready chopped.
  2. Bring lightly salted water to a rapid boil in a large pot.
  3. Cut stems off spinach leaves and clean well. This can be done easily by leaving spinach bundled and cutting off stems all at once
  4. Cook spinach in boiling water for 1 minute.
  5. Drain and press out excess water. Toss in rest of ingredients while still hot.
